1/2 c. crisco
My first-ever made-up recipe that turned out, inspired from someone else's idea to mix chocolate, hazelnut flavor, and coffee. I made these for Zack's graduation reception but tried to perfect the recipe just today. Here is where it stands now.
1/2 c. butter, softened
1 1/4 c. granulated sugar
1/2 c. cocoa
2 eggs
3 T strong coffee
3 T hazelnut syrup
1 T instant coffee granules
1 t. baking powder
1 t. baking soda
3 1/2 c. flour
1 1/2 c. chocolate chips
1/2 c. chopped pecans
Cream crisco, butter, sugar, and cocoa. Add eggs, coffee, syrup, and coffee granules; beat well. Beat in dry ingredients. Stir in chocolate chips and nuts. Drop by teaspoonfuls; flatten slightly with finger. Bake 8-9 minutes at 350. Cool and frost. Sprinkle with chopped hazelnuts (or other nuts).
Hazelnut Buttercream Frosting:
1/4 c. crisco
1/4 c. butter, softened
1 t. vanilla
2 - 2 1/2 c. powdered sugar
1 T milk or cream
1/4 c. melted semisweet chocolate chips or cocoa
4 t. hazelnut syrup
Beat ingredients together well. And spread semi-thick over cookies.
I invite you to create your own cookie recipe and email it to me. All you have to do is mix a little bit of this and a little bit of that. It's FUN! The worst that could happen is you ending up with flat, bitter cookies, but you can try again. :)
I can testify that they are extremely tasty just the way you made them for the graduation...can't imagine them being any better! There were so many types you made for his party (all wonderful) that I'm sure lots of people missed this one. They freeze wonderfully and are great 1/2 frozen with a cup of hot coffee in the morning! Wish I had a few left over in my freezer still! :)

You ask WHO eats them?!? The correct question is who DOESN'T eat them? Not that these cookies are that great; Jared would've preferred peanut butter cookies. But Carly is a cookie monster. Jared eats cookies 6+ at a time. I try to limit myself to 4 for each glass of milk. Isaac thinks he likes cookies, but ends up eating only half of each one.
ReplyDeleteAnother blissful moment: Jeanne sent a package of peanut butter-stuffed oreos. Oh, bliss. But only if you dip them in milk first. It's interesting how the estimation of time is always a hard thing to do EXCEPT when dipping cookies. Jared and I always know when it's time to take the oreo out of the milk.
I made a batch of these. They didn't last long! They were a winner at our house! Anything with coffee and hazlenut has to be good!
